1 Serving, 4 Proteins, 1 Vegetable

4 ounces cooked Maine shrimp
¼ C diced fresh tomato
¼ C diced cucumber
¼ C diced red onion
¼ C diced bell pepper
2 tbsp chopped parsley
2 tbsp lemon or lime juice
1 tbsp olive oil
1 tsp paprika
salt and pepper to taste

Combine all ingredients, cover and refrigerate for at least one hour. Eat as is, or enjoy over greens.
