Serving size 1/4 cup, 1 Vegetable
- 2 (15-ounce) cans chickpeas, also known as garbanzo beans, thoroughly drained and rinsed (about 3 cups)
- 2 tablespoons olive oil
- 1/2 teaspoon sea salt
- spices (cayenne, smoked paprika, oregano, rosemary, turmeric, cumin, pepper, and garlic are great options)
Heat oven to 400 degrees F. Place chick peas on a towel in a single layer and let air dry (the drier they are the crispier they will turn out). Once dry, toss chick peas, olive oil and spices together in a bowl. Arrange in a single layer on a baking sheet and bake for 30-40 minutes.
